This year we got lots of tomatoes from our vegetable garden. With an abundance of these fresh tomatoes at hand, I decided to explore various recipes to make the most of our harvest. I tried different recipes with ripe tomatoes and green ones, and this green tomato stir-fry turned out great; everyone at home truly enjoyed it; it’s a quick and simple side dish to prepare in a small amount of time. The tartness of the green tomatoes brought a unique taste, so I made it often. Here is the recipe.

Ingredients
- Green tomatoes ———- about 10
- Red onion —————— one medium size
- Turmeric powder———- 1/4 tsp
- Salt to taste
- To make a coarse paste
- Grated coconut ———– Handful
- Cumin seeds ————– 1/2 tsp
- Green chilies ————— 3
- For Tempering
- Cooking oil ————— 2tbsp
- Mustard seeds ———– 1/2 tsp
- Split urad dal ————- 1 tsp
- Curry leaves ————– 2 Springs
How to make
- Cut the green tomatoes and onion lengthwise
- In a mixer jar add the grated coconut, cumin seeds and green chilies and make a coarse paste
- Heat the pan and do the tempering
- Now add the cut onions and stir fry for few minutes
- Then add the green tomatoes and turmeric powder
- cook it for about seven minutes, stir few times
- Now add the coconut paste and mixed it well
- After two minutes turn off the stove, the tasty green tomato stir fry is ready to serve
- Now serve with rice
