Indian Style Asparagus Recipe with Coconut And Spices

In my cooking, I usually roast asparagus, but this time I tried an Indian style, and it turned out tasty, so I’m sharing the recipe. Asparagus is a healthy vegetable packed with vitamins A, C, E, and K, as well as fiber and antioxidants, which support the immune system and aid digestion. This versatile veggie can be grilled, steamed, roasted, or sautéed, making it a favorite among chefs and home cooking.

Ingredients

  • Asparagus ———– 1 lb.
  • Chili powder ——— 1/4 tsp
  • Turmeric powder —- 1/4 tsp
  • Grated coconut —— 1 handful
  • Salt to taste
  • For Tempering
  • Cooking oil —— — 1 tbsp.
  • Mustard seeds —- 1/2 tsp
  • Cumin seeds——- 1/2 tsp

How to make

  • Clean and slice the asparagus.
  • In a sauté pan, add oil and do the tempering.
  • Now add the sliced asparagus to the pan and cook for around four minutes.
  • Then add the chili, turmeric powder, and salt, and mix it well.
  • Cook for a few more minutes and then add the coconut. Mix it well, and after a minute, turn off the stove.
  • Now the tasty asparagus stir fry is ready to eat
  • We eat with rice, but you can eat with your favorite.
