
Kale is a kind of leaf cabbage, it contains more nutritional value than spinach. You can find it in most of the vegetable stores in the US. I am making this one like our hometown style murungai keerai (drumstick leaves) poriyal. Kale also tastes like murungai keerai. It is a very simple recipe.
Ingredients
- Kale ————————————— 1 bunch
- Grated coconut ——————– 1/4 cup
- Chili powder ————————- 1/4 tsp
- Turmeric powder ——————1/4 tsp
- Salt to taste
- For tempering
- Mustard seeds —————- 1/4 tsp
- Urad dal ————————— 1/2 tsp
- Cooking oil ———————- 2 tsp
How to make
- Wash the kale few times and finely chop it (don’t take the large stems, only the dark green parts)
- Place a pan on stove in medium heat and add oil
- Add mustard seeds and once it crackles, add the urad dal
- Add the chopped kale and stir fry until the leaves get soft (5 to 6 minutes)
- Then add the spice powders and salt and mix them well
- Add the grated coconut and cook for two more minutes
- Now it should be ready to serve
- You can serve it with rice
