Kale poriyal

Kale is a kind of leaf cabbage, it contains more nutritional value than spinach. You can find it in most of the vegetable stores in the US. I am making this one like our hometown style murungai keerai (drumstick leaves) poriyal. Kale also tastes like murungai keerai. It is a very simple recipe.

Ingredients

  • Kale ————————————— 1 bunch
  • Grated coconut ——————– 1/4 cup
  • Chili powder ————————- 1/4 tsp
  • Turmeric powder ——————1/4 tsp
  • Salt to taste
  • For tempering
    • Mustard seeds —————- 1/4 tsp
    • Urad dal ————————— 1/2 tsp
    • Cooking oil ———————- 2 tsp

How to make

  • Wash the kale few times and finely chop it (don’t take the large stems, only the dark green parts)
  • Place a pan on stove in medium heat and add oil
  • Add mustard seeds and once it crackles, add the urad dal
  • Add the chopped kale and stir fry until the leaves get soft (5 to 6 minutes)
  • Then add the spice powders and salt and mix them well
  • Add the grated coconut and cook for two more minutes
  • Now it should be ready to serve
  • You can serve it with rice
