Dosa is a famous south Indian dish, made from fermented batter. The main ingredients for dosa batter are boiled rice and black gram dal. People use different methods and proportions of the ingredients to make the batter, but using the method described here, I always get the thin crispy and colorful dosa. When you are making dosa next time, try this method. I am sure you will get a lot of complements.

Making The Potato Masala
Ingredients
- Boiled potato ——————— 4 (smash into medium pieces)
- Onion ——————————— 1/2 (cut it into small pieces)
- Green chilies ——————— 2 (minced)
- Turmeric powder ————- 1/8 tsp
- Salt to taste
- Cilantro —————————— few springs (optional)
- For Tempering
- Mustard seeds ———— 1/2 tsp
- Urad dal ———————– 1/2 tsp
- Channa dal —————— 1/2 tsp
- Curry leaves —————- 2 springs
- Cooking oil —————— 1 tsp

How To Make
- Heat the oil in a wide pan
- Add the mustard seeds and wait until it crackles
- Then add the urad dal, channa dal and curry leaves
- Now add the onion, green chilies and saute for couple of minutes
- Then add the medium smashed potato, turmeric powder and salt
- Mix them all well and add a 1/4 cup of water and cook until it become thick
Making The Dosa
- Place a cast iron dosa pan on medium heat
- Grease with sesame oil
- Take a ladle full of batter and spread it on the pan using the ladle in a circular motion
- Sprinkle with sesame or olive oil on the top and cover with a lid
- After two minutes, open the lid and add a little potato masala on it
- Now fold the dosa into half
- You will get the crispy colorful dosa
- Serve with chutney and sambar or any other side dish
