Potato Fry

This is a crowd-pleasing potato dish. It is crispy outside and soft inside. This recipe is from my dear friend Gayathri. In our potluck get-togethers, everyone ask her to bring this potato fry. When I got the recipe from her, I tried at home and it came out very well. Now this is my favorite recipe to make potatoes at our home. For rice with rasam or yogurt, it will be a great side dish. Sometimes my daughter eats this as main dish too with ketchup.

Ingredients

  • Potato ————————— 4 medium size
  • Sambar powder ———- 1 tbsp
  • Cooking oil —————— 2 tbsp
  • Salt to taste

How To Make

  • Peel the skin off from the potatoes and cut them into big cubes
  • In a saucepan add three cups of water and bring it to boil
  • Now add the potatoes and cook them until they become tender (don’t cook it thoroughly)
  • Strain the water
  • Now add the sambar powder, salt and one teaspoon of oil into it and mix them well
  • Heat the remaining oil in a wide pan
  • Add the potatoes
  • In medium heat, roast this until it becomes golden brown color (about ten minutes)
  • Now the crispy potato fry is ready to serve

Notes

  • Sometimes I add few smashed garlic into this, it will add the garlic flavor
  • Also sometimes I french cut the potatoes instead of cubes
  • Don’t overcook the potatoes, otherwise it will loose the shape
