Snake Gourd Stir-fry (Pudalankai Poriyal)

Snake Gourd is a common vegetable used in south Indian cooking. We make different kinds of dishes from it. This is a simple and tasty recipe from our hometown, we usually eat this as side dish for rice. Adding egg and grated coconut gives more taste to this dish. I have already posted another recipe of making snake gourd with lentils. This is a different tasty recipe, you should try it and it takes very little time to make.

Ingredients

  • Snake guard —————————- 2
  • Egg ——————————————- 1
  • Grated coconut ———————– 1/4 cup
  • Indian chili powder —————- 1/4 tsp
  • Turmeric powder ——————– 1/4 tsp
  • Salt to taste
  • For Tempering
    • Mustard seeds ——————- 1/2 tsp
    • Urad dal —————————— 1 tsp
    • Cumin seeds ———————- 1/2 tsp
    • Curry leaves ———————— 2 springs
    • Cooking oil ————————– 1 tbsp

How To Make

  • Wash and scrap the outer skin of snake gourd
  • Cut them into half and discard the seeds
  • Now cut them into small pieces
  • Heat oil in a pan and add mustard seeds
  • Wait until it crackles and add the urad dal, cumin seeds and curry leaves
  • Then add the snake guard pieces and saute for couple of minutes
  • Now add the salt, chili powder and turmeric powder
  • Cook it until it becomes tender in about seven minutes
  • Now add the egg and stir for a minute
  • Then add the grated coconut and stir it for two more minutes
  • Now switch off the stove and it should be ready to serve
