This is a tasty, savory kootu made from fresh carrots. Amma makes this often at home, as a side dish for rice, I also make it often here and everyone in home likes this simple carrot kootu. It is very easy to make this dish in short amount of time. When you make this dish, be careful, don’t overcook the carrots. Here is the recipe.

Ingredients
- Carrot ——————— 4 (medium size)
- Turmeric powder ——— 1/4 tsp
- Cayenne pepper or Indian chili powder — 1/4 tsp
- Salt to taste
- For grinding
- Handful of grated coconut
- Curry leaves ——— 2 springs
- Garlic clove ———- 2 (small)
- Cumin seeds ——— 1/2 tsp
- For Tempering
- Cooking oil ———– 1 tbsp
- Mustard seeds ——- 1/2 tsp
- Cumin seeds ———- 1/4 tsp
- Split urad dal ——— 1/2 tsp
- Curry Leaves ———- 1 spring

How To Make
- Wash the carrots and dice into small pieces
- Coarsely grind the grated coconut, curry leaves, garlic cloves and cumin seeds using a blender or mixer and keep it aside
- Heat the kadai or pan on medium heat
- Add the cooking oil and do the tempering
- Now add the diced carrots
- Then add turmeric powder, Indian chili powder, salt and 1/4 cup of water, mix it all well
- Cook it for about 4 minutes
- Now add the coconut paste and mix it all together
- Cook for couple more minutes and turn off the stove
- Serve with rice
- Do not overcook the carrots, it won’t taste good
