
Ingredients
- Mixed vegetables ————— 1 cup (carrot, beans and corn)
- Potato ———————————- 1 (cut it into small cubes)
- Cauliflower ————————- 1/2 cup
- Onion ———————————- 1 (diced into small pieces)
- Tomato ——————————– 2 (diced into small pieces )
- Ginger garlic paste ————- 1 tbsp
- Cooked chickpea —————- 1 cup
- Cumin seeds ———————— 1/2 tsp
- Cooking oil ————————– 1 tbsp
- To make a coconut paste
- Grated coconut ———– 1/4 cup
- Chili powder —————- 1/2 tsp
- Coriander powder ——- 1/2 tsp
- Garam masala ————- 1/4 tsp
- Turmeric powder ——– 1/4 tsp
- For seasoning
- Cumin seeds —————- 1/2 tsp
- Fennel seeds —————- 1/4 tsp
- Bay leaf ————————- 2
- Curry leaf ———————- 2
- Cinnamon stick ———— 1
- Aniseed ————————- 1
- Cooking oil ——————– 2 tsp




How to make
- Grind all the things listed for making coconut paste using a mixer/blender to make a fine paste
- Steam the vegetables for 5 minutes and keep it aside
- Take a heavy bottom pan and heat it in medium heat
- Add the oil and cumin seeds

- Add the onion and saute well for few minutes
- Then add tomato and ginger garlic paste
- Cook for 5 minutes

- Add the steamed vegetables, cooked chickpea and coconut paste and mix well
- Add one cup of hot water and cook for 5 more minutes
- While it is cooking, let us prepare for seasoning
- Heat a small sauce pan in medium heat and add the oil
- Once the oil is hot, add cumin seeds, fennel seeds, bay leaf, cinnamon stick, aniseed and curry leaves
- Then pour the seasoning on the kurma

- Now it is ready to serve
