Vegetable Kurma

Ingredients

  • Mixed vegetables ————— 1 cup (carrot, beans and corn)
  • Potato ———————————- 1 (cut it into small cubes)
  • Cauliflower ————————- 1/2 cup
  • Onion ———————————- 1 (diced into small pieces)
  • Tomato ——————————– 2 (diced into small pieces )
  • Ginger garlic paste ————- 1 tbsp
  • Cooked chickpea —————- 1 cup
  • Cumin seeds ———————— 1/2 tsp
  • Cooking oil ————————– 1 tbsp
  • To make a coconut paste
    • Grated coconut ———– 1/4 cup
    • Chili powder —————- 1/2 tsp
    • Coriander powder ——- 1/2 tsp
    • Garam masala ————- 1/4 tsp
    • Turmeric powder ——– 1/4 tsp
  • For seasoning
    • Cumin seeds —————- 1/2 tsp
    • Fennel seeds —————- 1/4 tsp
    • Bay leaf ————————- 2
    • Curry leaf ———————- 2
    • Cinnamon stick ———— 1
    • Aniseed ————————- 1
    • Cooking oil ——————– 2 tsp

How to make

  • Grind all the things listed for making coconut paste using a mixer/blender to make a fine paste
  • Steam the vegetables for 5 minutes and keep it aside
  • Take a heavy bottom pan and heat it in medium heat
  • Add the oil and cumin seeds
  • Add the onion and saute well for few minutes
  • Then add tomato and ginger garlic paste
  • Cook for 5 minutes
  • Add the steamed vegetables, cooked chickpea and coconut paste and mix well
  • Add one cup of hot water and cook for 5 more minutes
  • While it is cooking, let us prepare for seasoning
  • Heat a small sauce pan in medium heat and add the oil
  • Once the oil is hot, add cumin seeds, fennel seeds, bay leaf, cinnamon stick, aniseed and curry leaves
  • Then pour the seasoning on the kurma
  • Now it is ready to serve
