
- Wash the eggplants
- Snip off the top stem
- Take water in a wide bowl and add few drops of olive oil and a pinch of turmeric powder (this will prevent the blackening of the cut eggplant). Optionally, you can add little lemon juice as well
- Cut the eggplant into the size you want and put it in the above bowl
- Stir the cut eggplant well in the water and strain the water
- Now pack them in freezer bags and store them in the freezer
