Tomato Curry

This is one of the easiest curries to pair as a side dish for rice.It will take only 10 minutes to make, including preparation and cooking time. You can make this tomato curry with any kind of tomato – pick your favorite! This is a very tasty curry… the flavors will be a little sour and sweet. For this recipe, I’m going to use tomatoes from my garden and there are many varieties included.

Ingredients

  • Tomato ——————————– 5 (any variety)
  • Chili powder ———————– 1/4 tsp
  • Turmeric powder ————— 1/4 tsp
  • For Grinding
    • Grated coconut ———— 1/4 cup
    • Cumin seeds —————- 1 tsp
    • Garlic clove —————— 1
    • Curry leaves —————– 2 spring
  • For Tempering
    • Cooking oil ——————- 1 tbs
    • Mustard seeds ————- 1/2 tsp
    • Curry leaves —————– 1 spring

How to make

  • Wash and cut the tomatoes into large size cubes
  • Grind the grated coconut, cumin seeds, garlic and curry leaves into medium fine paste
  • Place a pan on high heat
  • Add oil and once it gets hot, add the mustard seeds
  • After mustard crackles, add the curry leaves
  • Add the cut tomatoes and cook for 3 minutes
  • Add the chili powder, turmeric powder and salt and mix them well
  • Now add the coconut paste and cook for 2 more minutes
  • Switch off the stove
  • Now it should be ready to serve
