In our home, I often make beets poriyal, most of the time, I add different kinds of dals or peas into it, so it won’t be boring to eat often. This time I added some chickpeas in it, so you will get some protein too. It is a simple and tasty recipe.

Ingredients
- Beets —————————– 2 (minced)
- Cooked chickpea ——– 1/2 cup (minced)
- Grated coconut ———— 1/4 cup
- Chili powder —————- 1/4 tsp
- Turmeric powder ——– 1/8 tsp
- Salt to taste
- For tempering
- Cooking oil ——————- 1 tbsp
- Mustard seeds ————- 1/2 tsp
- Cumin seeds —————- 1/2 tsp
- Split urad dal —————- 1 tsp
- Curry leaves —————– 2 spring
How to make
- In a pan, heat the oil and add mustard seeds
- Once it crackles, add the cumin seeds, urad dal and curry leaves
- Mince the beets and chickpeas (I used the chopper to mince)
- Add the minced beets, chili powder, turmeric powder and salt to the pan
- Stir fry for around 10 minutes
- Now add the minced chickpea and mix it well
- Keep stirring for a minute
- Then add the grated coconut and mix it well
- Cook for couple of more minutes and switched off the stove
- Now it should be ready to serve
