
This is a very delicious side dish for chapati/roti. If you like mushroom you will definitely like this dish. This is a very colorful and flavorful recipe, when you get time give it a try.
Ingrdeients
- Mushroom ———————————- 500 gm (sliced)
- Onion ——————————————- 1 1/2
- Tomato —————————————- 4 (diced)
- Red and green bell pepper ——— 1 cup (diced)
- Ginger garlic paste ——————— 1 tbsp
- Cashews ————————————— 1/8 cup
- Whole coriander seeds ————— 1 tsp
- Cashmere chili —————————- 1 (cut into 2 or 3 pieces)
- Cooking oil ———————————– 2 tbsp
- Salt to taste
- For garnishing
- Cilantro —————————————————– a small bunch (chopped into small pieces)
- Spice powders
- Paprika or Cashmere chili powder ——– 1 tsp
- Coriander powder ———————————— 11/2 tbsp
- Turmeric powder ————————————– 1 tsp
- Garam masala ——————————————- 1 tsp
How to make
- Mince one onion into small pieces and dice the remaining 1/2 onion
- Soak the cashews in hot water and make a paste
- Place a heavy bottom pan on the stove in medium heat
- Add the oil, whole coriander seeds and the chili
- Add the minced onions and cook until it turns brown
- Add the ginger garlic paste and stir for little time
- Add the diced tomato and mix it well
- Now add salt and the spice powders except the garam masala
- Cook until the oil oozes out
- Add the cashew paste, mix it well and cook for two more minutes
- Add the diced onion, diced peppers and cook for 5 more minutes
- Add the garam masala and mix well
- Add the mushrooms, mix it well and cook for about 15 more minutes
- Switch off the stove and garnish with cilantro
- Now it is ready to serve
