Swiss Chard With Egg Stir-Fry

Swiss chard is one of my favorite spinach. This year we had lot of Swiss chard in our vegetable garden, so I made different kinds of dishes using them. This is the tastiest one, also you can make it in few minutes. Usually I make it in the morning for breakfast as side dish for steel-cut oats.

Ingredients

  • Swiss chard ———————– a bunch
  • Egg ————————————– 2
  • Grated coconut ——————- 1/4 cup
  • Indian chili powder ———– 1/4 tsp
  • Turmeric powder ————— 1/8 tsp
  • Cooking oil ————————– 1 tsp
  • Salt to taste

How To Make

  • Wash and discard the stalks from the Swiss chard
  • Then finely cut the Swiss chard
  • Heat oil in a pan and add the finely cut Swiss chard
  • Saute for two minutes and add salt, chili powder, turmeric powder and mix them well
  • Add the eggs and keep stirring until the egg is cooked
  • Now add the grated coconut, mix it well and switch off the stove
  • Serve with your main dish
