Eggplant/Brinjal Pan Fry

This is a quick and easy recipe. In our hometown, my sister often makes this. This goes well with the combination of paruppu curry and hot rice. You can make it using all kinds of eggplants; big or small ones. I am using the big one, which is easily available in in the stores.


  • Eggplant —————————— 1
  • Indian chili powder ———— 1/2 tsp
  • Turmeric powder ————— 1/4 tsp
  • Coriander powder ————– 1/4tsp
  • Garam masala ——————– 1/4 tsp
  • Block pepper powder ——— 1/8 tsp
  • Salt to taste
  • Cooking oil ————————– 1 tbsp

How To Make

  • Wash and slice the eggplant into circles
  • Marinate with all the spice powders and salt for 5 to 10 minutes
  • Heat the oil in a wide pan in medium heat and place the marinated eggplant slices
  • Cook them for around four minutes on each side
  • Switch off the stove and enjoy
