This is a very colorful and tasty side dish for rice. Also very simple to make.

Ingredients
- Chopped cauliflower ——– about a cup
- Chopped carrot —————- about a cup
- Split moong dal —————- 1/2 cup
- Indian chili powder ———- 1/2 tsp
- Turmeric powder ————– 1/4 tsp
- Salt to taste
- To make a coconut paste
- Grated coconut ———— 1/4 cup
- Garlic —————————- 1 clove
- Cumin seeds —————– 1/2 tsp
- For seasoning
- Cooking oil ——————– 1 tbsp
- Mustard seeds ————– 1/2 tsp
- Curry leaves —————— few springs

How To Make
- Heat a pan and dry roast the moong dal for couple of minutes
- Then add turmeric powder and a cup of water
- Cook it until the moong dal becomes tender (10 to 15 minutes)
- Now add the cut cauliflower, carrot, chili powder and salt
- Cook for about five minutes (don’t over cook)
- Now add the coconut paste, mix them well and cook for two more minutes
- Turn off the stove and change the dish into the serving bowl
- Now do the seasoning
- And enjoy with rice
