Cauliflower and Carrot Kootu

This is a very colorful and tasty side dish for rice. Also very simple to make.


  • Chopped cauliflower ——– about a cup
  • Chopped carrot —————- about a cup
  • Split moong dal —————- 1/2 cup
  • Indian chili powder ———- 1/2 tsp
  • Turmeric powder ————– 1/4 tsp
  • Salt to taste
  • To make a coconut paste
    • Grated coconut ———— 1/4 cup
    • Garlic —————————- 1 clove
    • Cumin seeds —————– 1/2 tsp
  • For seasoning
    • Cooking oil ——————– 1 tbsp
    • Mustard seeds ————– 1/2 tsp
    • Curry leaves —————— few springs

How To Make

  • Heat a pan and dry roast the moong dal for couple of minutes
  • Then add turmeric powder and a cup of water
  • Cook it until the moong dal becomes tender (10 to 15 minutes)
  • Now add the cut cauliflower, carrot, chili powder and salt
  • Cook for about five minutes (don’t over cook)
  • Now add the coconut paste, mix them well and cook for two more minutes
  • Turn off the stove and change the dish into the serving bowl
  • Now do the seasoning
  • And enjoy with rice
