This is a very popular sweet snack in Kerala. Amma used to make it often at home, usually she makes it using freshly ground rice flour, but this recipe is using whole wheat flour. They taste differently, but both are really good. I will share the rice flour recipe another time.

Ingredients
- Whole wheat flour ———————– 1 cup
- Banana —————————————– 1
- Thin sliced coconut pieces ——— 1 handful
- Ghee ——————————————— 1 tsp
- Dry ginger powder ———————– 1/8 tsp
- Cardamom powder ———————- 1/8 tsp
- Enough oil to fry
- To make a jaggery syrup
- Jaggery ———————————— 1 cup
- Water ————————————— 1/2 cup

How To Make
- In a small pan heat the ghee, add the sliced coconut pieces and roast them until they become golden brown
- In a small pan heat the water and jaggery
- Once the jaggery is melted, turn off the stove
- Mix the wheat flour and banana in a bowl with hand
- Now pour the hot jaggery syrup into the bowl and mix it well with a spoon
- Then add the roasted coconut pieces, the ginger and cardamom powders and mix them well
- Keep this batter for half an hour
- Now place the kuzhi paniyaram pan, also called as unniyappam pan on the stove and add oil
- Keep it in high heat until the oil gets hot, then reduce the heat to medium
- Now pour a tablespoon of batter in each deep spot of the pan
- Once one side is cooked, flip to the other side (it will take 2 to 3 minutes each side)
- Now the tasty unniyappam is ready to eat
