This is one of my favorite poriyals. Very easy to make in short time. I always have few beets in our fridge and it comes in handy for a last minute side dish for rice.

Ingredients
- Beets ——————————- 2 medium size
- Onion —————————— 1 small size
- Grated coconut ————– 1/4 cup
- Chili powder ——————- 1/4 tsp
- Turmeric powder ———– 1/8 tsp
- For tempering
- Mustard seeds ———- 1/2 tsp
- Split urad dal ————- 1 tsp
- Curry leaves ————– 2 springs
- Cooking oil —————- 1 tbsp

How to make
- Wash the beets and peel off the skin
- Then grate it using a regular grater
- Dice the onion into small pieces

- Place a pan on medium heat
- Add oil and once it is hot, add the mustard seeds
- After the mustard crackles, add the urad dal and curry leaves
- Then add the diced onion and saute for 2 minutes
- Add the grated beets and stir fry for 2 minutes
- Add the chili powder, turmeric powder and salt
- Stir fry it for about 10 minutes
- Then add the grated coconut and mix it well
- Keep stirring for 2 more minutes and switch off the stove
- Now the tasty beets poriyal should be ready to serve
