This is a recipe I put together after many failed trials making quinoa. When I tried making quinoa based on different recipes, I didn’t really like the taste. Then I tried to mix and match with different ingredients and came up with this combination, which I like far more than anything I’ve tried before.

Ingredients
- Quinoa —————————- 1 cup
- Mixed vegetables ———- 1 cup
- Cooked chickpea ———– 1 cup
- Mushroom ———————- 1 cup (diced)
- Chili powder ——————- 1/4 tsp
- Turmeric powder ———— 1/4 tsp
- Cooking oil ———————- 1 tsp
- Salt to taste
Note: Instead of cooked chickpea, we can use canned chickpea. Also I used frozen mixed vegetable here, but we can use fresh vegetables too.

How to make
- Boil 1 1/2 cups of water in a pan
- Wash the quinoa and add it to the boiling water
- Add a pinch of salt to it
- Quinoa will be cooked in 7 to 10 minutes
- In the meantime, place another pan on medium heat
- Add a tsp of oil and add the mushroom
- Cook it for 3 minutes
- Add the vegetables and cook for 5 more minutes
- Add the chili and turmeric powders and little salt
- Then add the cooked chickpea and mix them well
- Now add the cooked quinoa and mix all well blended
- Switch off the stove and it should be ready to serve
