Quinoa Salad

This is a recipe I put together after many failed trials making quinoa. When I tried making quinoa based on different recipes, I didn’t really like the taste. Then I tried to mix and match with different ingredients and came up with this combination, which I like far more than anything I’ve tried before.


  • Quinoa —————————- 1 cup
  • Mixed vegetables ———- 1 cup
  • Cooked chickpea ———– 1 cup
  • Mushroom ———————- 1 cup (diced)
  • Chili powder ——————- 1/4 tsp
  • Turmeric powder ———— 1/4 tsp
  • Cooking oil ———————- 1 tsp
  • Salt to taste

Note: Instead of cooked chickpea, we can use canned chickpea. Also I used frozen mixed vegetable here, but we can use fresh vegetables too.

How to make

  • Boil 1 1/2 cups of water in a pan
  • Wash the quinoa and add it to the boiling water
  • Add a pinch of salt to it
  • Quinoa will be cooked in 7 to 10 minutes
  • In the meantime, place another pan on medium heat
  • Add a tsp of oil and add the mushroom
  • Cook it for 3 minutes
  • Add the vegetables and cook for 5 more minutes
  • Add the chili and turmeric powders and little salt
  • Then add the cooked chickpea and mix them well
  • Now add the cooked quinoa and mix all well blended
  • Switch off the stove and it should be ready to serve
