Egg Poriyal

This is a variation of typical scrambled egg, but with some added spices and coconut which makes it way tastier than normal scrambled egg! In a pinch, this dish can easily be a meal on its own, but also pairs well with oats or rice.

Ingredients

  • Egg —————————– 2
  • Onion ————————- 1/2 diced
  • Grated coconut ——– 1/4 cup
  • Chili powder ————- 1/8 tsp
  • Turmeric powder —– 1/8 tsp
  • Curry leaf —————— 3 springs (optional)
  • Cooking oil —————- 1 tsp
  • Salt to taste

How to make

  • Crack the egg in a bowl and add all the ingredients in the list
  • Whisk all things together
  • Heat oil in a pan on medium heat
  • Pour the egg mixture and stir fry it for about 4 minutes
  • Now it should be ready to serve

  1. […] This is one of my favorite healthy breakfast dishes, . You can prepare this one on the stove top, in a slow cooker or in an instant pot, but mostly I make it in the pressure cooker. It is the easiest thing for me to prepare on a busy morning, the leftover also can stay good in the refrigerator for a day or two. Steel cut oats is fairly neutral, so you can eat it with fruits on top, but I like to eat with something spicy like tomato thokku and a scrambled egg (egg poriyal). […]
