This is a variation of typical scrambled egg, but with some added spices and coconut which makes it way tastier than normal scrambled egg! In a pinch, this dish can easily be a meal on its own, but also pairs well with oats or rice.

Ingredients
- Egg —————————– 2
- Onion ————————- 1/2 diced
- Grated coconut ——– 1/4 cup
- Chili powder ————- 1/8 tsp
- Turmeric powder —– 1/8 tsp
- Curry leaf —————— 3 springs (optional)
- Cooking oil —————- 1 tsp
- Salt to taste
How to make
- Crack the egg in a bowl and add all the ingredients in the list
- Whisk all things together
- Heat oil in a pan on medium heat
- Pour the egg mixture and stir fry it for about 4 minutes
- Now it should be ready to serve
