
Ingredients
- Mint —————————— 2 bunches
- Cilantro ————————-2 bunches
- Grated coconut ———— 1/4 cup
- Green chilies —————– 2
- Red chilies ——————— 2
- Garlic clove ——————- 4
- Split urad dal —————– 2 tsp
- Cumin seeds —————— 1 tsp
- Cooking oil ——————— 1 tsp
- Salt to taste
How to make
- Wash the cilantro and mint
- Remove the faded leaves
- Heat a pan in medium heat and add oil
- Once it is hot, add the chilies, urad dal, cumin seeds and garlic cloves
- Roast them for a minute
- Now add the washed mint and cilantro
- Stir it for 2 minutes

- Add the coconut and salt
- Stir it for one more minute and switch off the stove

- Wait for the cooked mixture to cool down
- Then grind the mixture with little bit of water using a mixer/blender
- Make it into a medium fine paste

- Fill this paste into a ice tray and keep it in the freezer

- Once it freezes take it out and store it in freezer bags
- I use this in many dishes
- While making biryani, use this instead of adding mint & cilantro
- Use it to make cilantro & mint chutney
- Use it as spread when making bread sandwich
- And many more….
- I generally get a lot of fresh mint and cilantro from the farmers market in summer and store it like this for future use
