This is the quickest chutney that I can make, if I have the mint cubes and grated coconut in the freezer. Most of the times I will have few mint cubes and grated coconut in our freezer, so whenever I need to make a quick side dish for dosa or idly, this is my go to chutney. Even though this chutney is a combination of mint and cilantro, I simply call it as mint chutney and one of my daughters, even more simply, calls this as green chutney. Once you try this chutney, you will always want to keep few mint cubes in your freezer and you too can make this tasty chutney in few minutes.

Ingredients
- Mint cubes ——————————— 4
- Grated coconut ————————– 1/4 cup
- 1/4 cup warm water
- Salt
- For seasoning
- Cooking oil ————————— 1 tsp
- Mustard seeds ——————— 1/2 tsp
- Dry chilies —————————- 2
- Split urad dal ———————— 1/4 tsp
- Curry leaves ————————- 2 springs

How to make
- Thaw the mint cubes (microwave for a minute) and add the grated coconut and little salt ( already mint cubes have the salt)
- Grind it into a smooth paste
- For seasoning, heat a pan with oil
- Add mustard seeds and wait until it crackles
- Now add the dry chilies and curry leaves
- Then pour this into the chutney
- Enjoy with dosa or idli

Notes
- I used frozen grated coconut, so I added hot water. If you are using fresh one, add normal water
- Depending on the thickness of the chutney you want, you can add more water
- Seasoning is optional, sometimes I serve without seasoning
