Storing ground mint and cilantro

Ingredients

  • Mint —————————— 2 bunches
  • Cilantro ————————-2 bunches
  • Grated coconut ———— 1/4 cup
  • Green chilies —————– 2
  • Red chilies ——————— 2
  • Garlic clove ——————- 4
  • Split urad dal —————– 2 tsp
  • Cumin seeds —————— 1 tsp
  • Cooking oil ——————— 1 tsp
  • Salt to taste

How to make

  • Wash the cilantro and mint
  • Remove the faded leaves
  • Heat a pan in medium heat and add oil
  • Once it is hot, add the chilies, urad dal, cumin seeds and garlic cloves
  • Roast them for a minute
  • Now add the washed mint and cilantro
  • Stir it for 2 minutes
  • Add the coconut and salt
  • Stir it for one more minute and switch off the stove
  • Wait for the cooked mixture to cool down
  • Then grind the mixture with little bit of water using a mixer/blender
  • Make it into a medium fine paste
  • Fill this paste into a ice tray and keep it in the freezer
  • Once it freezes take it out and store it in freezer bags
  • I use this in many dishes
    • While making biryani, use this instead of adding mint & cilantro
    • Use it to make cilantro & mint chutney
    • Use it as spread when making bread sandwich
    • And many more….
  • I generally get a lot of fresh mint and cilantro from the farmers market in summer and store it like this for future use
